The Short Answer
Milk kefir works brilliantly in smoothies, dressings, overnight oats, pancakes and more. Its natural tang adds depth to both sweet and savoury recipes while keeping all the probiotic goodness of your live kefir grains intact. The six recipes below are some of the most popular among our community of home brewers across Ireland.
Homemade milk kefir is one of the most versatile ingredients in your kitchen, drink it straight, blend it into a smoothie, or use it as a base for something more adventurous. These six recipes are used daily by Irish home brewers and cover everything from quick high protein breakfasts to anti-inflammatory blends. Green Super-Food Kefir
- ½ cucumber
- 1 apple
- ¾ avocado
- 1 tbsp lemon juice
- Handful of kale or parsley
- 1L milk kefir
Avocado gives it a creamy mousse like texture that takes the edge off the greens, while the overall blend has a deep alkalising effect.
Peachy Ginger Digestive Kefir
- 1 fresh peach
- 1 slice fresh ginger (or a pinch of powder)
- 1L milk kefir
Ginger gets the digestive enzymes going, and the peach brings natural prebiotic sugars that feed the kefir bacteria.
Antioxidant Chocolate Kefir
- 1 frozen banana
- 80g–100g raw cacao
- 2 tbsp honey
- 1L milk kefir
Raw cacao is loaded with polyphenols, blending it with kefir makes those compounds easier for your body to absorb.
Want Thicker Smoothies? Use Frozen Fruit
If your blends are coming out too thin, swap fresh fruit for frozen. The ice crystals in frozen berries or bananas break down during blending and naturally thicken the drink to a frappé style consistency, no gums, no starches, no shortcuts needed. You can also try a second fermentation beforehand, which naturally thickens the kefir itself before you blend.
How to Store Your Milk Kefir Recipes
Once blended, your kefir smoothie is best enjoyed within 24 hours. It will stay safe to drink for 2–3 days in the fridge, but the longer it sits, the more the bacteria consume the fruit sugars, and the sourer it gets. Fresh is always best.
Always store blended kefir in the refrigerator at 4°C. Leaving it out on the counter causes it to separate quickly, and if you’ve sealed it tight, pressure can build up inside the bottle.
When it comes to containers, glass jars are your best option. Fill them with as little air at the top as possible, the less headspace, the slower the fruit browns and the longer the flavour stays fresh.
