What Is a Kombucha SCOBY?
A SCOBY (Symbiotic Culture of Bacteria and Yeast) is a living cellulose matrix that ferments sweetened tea into kombucha, a naturally fizzy, acidic drink containing organic acids, B vitamins, and beneficial microorganisms. New to brewing? Find out how to make kombucha before you get started. NutriBrew’s heirloom SCOBY is a direct descendant of an active mother culture, shipped fresh in low pH starter tea to ensure immediate fermentation activity upon arrival.

The Science Behind Kombucha SCOBYs
The SCOBY cellulose matrix acts as a stable habitat for communities of acetic acid bacteria, lactic acid bacteria, and yeasts that work together during fermentation to produce organic acids, carbon dioxide, and bioactive compounds. This complex microbial structure is what distinguishes a live heirloom SCOBY from dehydrated or mass produced alternatives.
- Research Backed: Research in the Journal of Food Science indicates that the bioactive organic acids in kombucha may support detoxification and help alleviate oxidative stress.
- Verified Genus Groups: Species commonly identified in kombucha SCOBYs include Acetobacter, Gluconacetobacter, Lactobacillus, and beneficial yeasts such as Zygosaccharomyces.
NutriBrew Mastery Tip: The Starter Strength Factor
To ensure a safe fermentation and prevent mold, always use at least 10–20% of mature, acidic starter tea from a previous batch. This high acidity (low pH) provides the essential protection required to keep your SCOBY resilient and your brew free from pathogens. Avoid using “weak” or young starter tea, as a high pH environment can weaken the culture’s defenses and allow harmful mold to take hold.
Master the Craft of Authentic Home Brewed Kombucha
Each order contains a live, active kombucha SCOBY shipped in high activity starter tea, ready to begin fermenting within 24 to 48 hours of arrival. No activation required.
- Batch Capacity: Brew 1L to 5L per cycle (7–14 days) based on your starter size.
- Natural Growth: Your culture naturally thickens and reproduces, allowing you to scale your production over time.
- Easy Setup: Your SCOBY creates a tart, probiotic base in a warm spot (20°C–26°C). For the signature fizz and flavour, simply move to a bottled second fermentation.

Kombucha FAQs & Troubleshooting
Yes. Our cultures are harvested fresh and shipped in a potent, high activity starter tea that keeps the “Mother” resilient. They can safely travel for up to 14 days without any loss in vitality or structural integrity.
Starter tea is the engine of the fermentation process. To ensure a safe, low-pH environment that prevents mold, you must use a minimum of 10% starter tea for your total batch volume. All our sizes include the precise amount of liquid required for success.
Kombucha SCOBY Options:
- SCOBY + 100ml Starter: Makes 1 Litre
- SCOBY + 200ml Starter: Makes 2 Litres
- SCOBY + 300ml Starter: Makes 3 Litres
- SCOBY + 500ml Starter: Makes 5 Litres
Mastery Tip: If your brewing environment is below 20°C, we recommend increasing the starter ratio to 15% to provide an extra layer of biological protection.
You only need basic kitchen items: a large glass jar, a breathable cloth cover with a rubber band, and a wooden or plastic spoon. No expensive kits are required to achieve professional, carbonated results using our Success Formula.
Yes. Because NutriBrew provides authentic heirloom “Mother” cultures, they are permanent. Unlike “powdered” starters that expire after one use, our SCOBYs are biologically resilient and will continue to brew batch after batch indefinitely, provided you follow the 4 Pillars Success Formula.
