Let’s get fizzy with it! Your guide to Water kefir Flavour

After your first fermentation (when you have water kefir finished and ready to consume) it’s now time to add flavour and culture again, this is called a second fermentation (and usually produces more fizz and more flavour).

All recipes below are for approx. 1 L of brewed water kefir. Learn how to make water kefir here.

Dr. Pepper

Produces a slight Dr. Pepper taste, give it a try!

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 1 tbsp. Raisins and seal the bottle.

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs.

Remove the raisins and serve the finished water kefir cold.

Basic Lemonade (or Lemon-Lime Ade)

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 1 tbsp. fresh lemon juice and/or
  • 1 tbsp. fresh lime juice and seal the bottle.

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Strawberry Lemon or Lime Ade

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 4-5 fresh strawberries or strawberry puree and
  • 1 tbsp. fresh lime or lemon juice before sealing the bottle.

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Vitamin C-Booster

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 1 tbsp. lemon juice
  • 1 tbsp. orange juice
  • 1 tbsp rosehips (dried or fresh)
  • 1/2 tbsp. elderberries (dried or fresh)
  • Zest from one organic orange

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Cranberry Lemonade

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 10 fresh cranberries
  • 2 tbsp. fresh lemon juice

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Orange Carrot Fizz

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 1 tbsp. carrot juice
  • 1 tbsp. orange juice

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Citrus Mojito

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 1 tbsp. lime juice
  • 1 tbsp. orange juice
  • 1 tbsp fresh mint leaves, chopped

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Vanilla Cream Soda

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 2 tsp. vanilla extract or vanilla powder
  • 1 tsp. sugar

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Orange Cream Soda

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 2 tsp. vanilla extract or vanilla powder
  • 2 tbsp. fresh orange juice

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

Peachy Lemonade

Make water kefir and remove the kefir grains. Then bottle the water kefir and add:

  • 2 tbsp. fresh peaches or peach juice
  • 1 tbsp. fresh lemon juice

Be sure to leave 1″ – 2″ of headspace at the top of your bottle as pressure will build.

Now seal the bottle. Allow to ferment for 24-48 hours. Check after 24 hrs to see if some fizz has built up inside the bottle, if not allow to ferment for an additional 24 hrs. Serve cold.

How to Make Coconut Water Kefir

  • Add 40g water kefir grains to 1L coconut water
  • Allow to culture for 24-48 hours before removing the kefir grains
  • Serve cold and enjoy!

You will however need to refresh your kefir grains by culturing them in sugar water in between batches of coconut water kefir. The sugar water will feed and refresh the kefir grains to keep them happy and healthy.
