Our Water Kefir Grains are extremely potent and 50g will be enough to brew 1L of Water Kefir. These are a premium, unique strains which you will not get from any other supplier.
A large variety of bacteria have been isolated and identified in Water Kefir grains. Known species are among four genus groups; Lactobacillus, Leuconostoc, Acetobacter, Streptococcus and Yeasts. So far anywhere from 40+ strains of bacteria and yeasts have been identified from Water Kefir around the world. Our Water Kefir grains are known to contain over 40 strains of bacteria and yeast making it one of the best sources known worldwide.

“The Citizen Science project is part of the EU funded MASTER project and is happening in collaboration with Teagasc, APC Microbiome Ireland, and VistaMilk. The aim of the project is to look at the microbial diversity of water kefir throughout an extended period of fermentations. The citizen scientists were given our water kefir grains and equipment to ferment water kefir at home for ~5 months. During this time, water kefir samples will be collected by the researchers and analysed for their microbial composition to investigate how water kefir grains are adapting to different fermentation settings and practices.”

Fermenting at home has never been easier!
- You will receive a generous amount of Water Kefir grains, sent in a liquid starter solution to keep them happy and healthy on their journey to you.
- Our grains are extremely potent and 40 grams of Kefir Grains will produce approx 1L of Water Kefir every 24-48 hours.
- Over time, your grains will grow and multiply. This means you can either make more Kefir at a time or enjoy stronger Kefir in the same time.
- Our Water Kefir is very easy to ferment: simply place the grains in sugar water, cover loosely and leave out of direct sunlight in a warm room for 24 hours or more, depending on temperature (full instructions provided).

What is the correct ratio of grains, water, and sugar for a batch of water kefir?
The standard ratio is 25 grams of live water kefir grains to 20 grams of sugar dissolved in 500 ml of non-chlorinated water. Always use this ratio, and adjust the amount of grains as they grow.

What type of water and sugar should be used to feed the grains?
We recommend using filtered water to remove chemicals and contaminants. Use certified organic cane sugar, although granulated sugar also works well. The sugar must be fully dissolved.

What is the optimal temperature and time for the first fermentation (F1)?
Place the covered jar in a warm spot, ideally between 20°C and 22°C, to culture for 24 to 48 hours. Ensure the sugar water has cooled to room temperature before adding the grains.

Will my water kefir be fizzy after the first fermentation?
No. After the first fermentation (F1), water kefir will taste like plain, sweetened water with little to no fizz. To achieve the desired carbonation and flavour, a second fermentation (F2) is absolutely necessary.

How do I know if the water kefir fermentation is working correctly?
The easiest test is to taste the mixture. If the finished water kefir tastes less sweet than the sugar water you started with, the grains are successfully working. It will be mildly sour, not strongly acidic.

What is the process for the Second Fermentation (F2) to add fizz and flavour?
After straining the grains, transfer the water kefir liquid to an airtight bottle. Add fruit or flavourings, seal the bottle, and let it sit at room temperature for an additional 24–72 hours. This feeds the remaining bacteria, boosting fizz and probiotic content.

How long does it take for the grains to start fermenting properly after shipping?
Water kefir grains require a settling period as they are temperature sensitive and adjust to your local water’s minerals. It usually takes 3 to 5 days, but can take 1 to 2 weeks to fully settle and function reliably. Continue the daily process.

How should I store the finished, bottled water kefir?
You can consume the bottled kefir immediately, or store it in the refrigerator for no longer than 2 to 3 weeks. Always open bottles with caution, as contents will be under pressure.

How do I take a break and store my water kefir grains long-term?
For a break of up to 3 weeks, place the grains in a new mixture of sugar and water, cover the jar with a tight lid, and store them in the refrigerator. For longer breaks, change the water and sugar every few weeks.

Are water kefir grains reusable, and is it necessary to rinse them?
Yes, our water kefir grains are reusable and can provide a continuous supply of kefir. It is not necessary to rinse the grains between batches; in fact, regular rinsing may damage them long-term.
