Our Water Kefir Grains Were Used in Published Scientific Research
The water kefir grains we supply, under our original trading name Live Ferments (now NutriBrew), were used as the source culture in Kefir4All, a peer-reviewed citizen science study led by researchers at Teagasc, APC Microbiome Ireland and VistaMilk. What Was Kefir4All?
Kefir4All was a citizen science project designed to help everyday people learn about microbiology by fermenting kefir at home, while also generating real scientific data for researchers. Over 100 participants, including school groups and members of the public, were given kefir grains and a simple fermentation kit, and asked to make kefir regularly for up to 21 weeks, recording their results along the way.
Water kefir grains sourced from us formed part of this study. Samples were collected at several points throughout the project and sent to Teagasc’s research centre for DNA sequencing, to see how the live cultures in the grains behaved and adapted in ordinary home kitchens rather than a controlled laboratory.
What Did the Study Find?
The researchers compared the microbial diversity found in the citizen scientists’ home fermentations with kefir grains fermented under strict laboratory conditions. The result: kefir’s microbial community held up well across very different real-world settings, different milk types, different sugar and fruit combinations, different room temperatures, and different levels of care. In plain terms, the study found that kefir grains are genuinely resilient and adaptable, not something that only works under lab-perfect conditions.
Alongside the science, the project was also a genuine success as public education: 94% of participating citizen scientists reported an improvement in both their interest and their knowledge of microbiology and fermented foods by the end of the study.
